中國(guó)白酒以酒香滲入千年文化精粹。
醬香型白酒,以酒體醇厚、優(yōu)雅細(xì)膩著稱(chēng),
《史記》中記載,
建元六年(公元前135年),
漢武帝派遣唐蒙出使南越,
唐蒙喝到南越所產(chǎn)的構(gòu)醬酒后,
將這種酒帶回了長(zhǎng)安。
到了明末清初,
匠人們用大曲參與糖化、發(fā)酵、蒸餾取酒的工藝日趨成熟,
經(jīng)過(guò)不斷的改良,
便有了如今舉世聞名的醬香型白酒。
清香型白酒,甘潤(rùn)爽口,余味柔和。
清代中期,
一些燒酒作坊為了提高燒酒的質(zhì)量,
用錫鍋對(duì)酒進(jìn)行冷卻。
因?yàn)榈谝诲伜偷谌伬鋮s的酒帶有部分雜質(zhì),
所以只摘取第二次換入錫鍋冷卻流出的最為純凈的酒,
就得到了綿甜清爽的清香型白酒。
濃香型白酒,香氣馥郁,回味悠長(zhǎng),
具有上百年歷史的老窖池是濃香型白酒釀制技藝的根基。
老窖池經(jīng)過(guò)長(zhǎng)期使用,
窖泥會(huì)形成微生物,與酒醅共同發(fā)酵。
池中蒸餾出的酒也就有了芬芳濃郁的味道。
如今的白酒猶如中國(guó)發(fā)給世界的一張飄香的名片,
淋漓盡致地展現(xiàn)出了中華酒文化的魅力和韻味!

Chinese Baijiu distilling
"Superb liquor, it lives up to its name; a unique fragrance, from this wonderful land."
The aroma of Chinese baijiu has infiltrated the long history of Chinese culture.
Maotai-flavor liquor features a mellow and delicate taste.
It is recorded in history that Han dynasty Emperor Wu dispatched Tang Meng in the sixth year of his reign (135 B.C.) as an envoy to a town in south China.
After drinking the liquor produced there, Tang brought it back to the capital city Chang'an (Today's Xi'an).
In the late Ming and early Qing dynasties (1600-1644), the process of using distiller yeast in saccharification, fermentation and distillation had gradually matured.
After continuous improvement, the world-famous Moutai-flavor baijiu was produced.
Fen-flavor baijiu is refreshing, with soft aftertaste.
In the mid-Qing Dynasty (1728-1820), in order to improve quality, some workshops cooled the liquor in tin pots.
Only the purest liquor cooled in the pot for the second time was kept.
That light-aroma type is called Fen-flavor baijiu.
Luzhou-flavor baijiu has a strong aroma and lingering aftertaste.
Old cellars exceeding a century in age provide the foundations for making Luzhou-flavor baijiu.
The old cellars, after a long time in use, produce a special aroma due to the fermented microorganisms, infusing the distilled liquor.
Today, Chinese baijiu is billed a “business card” of China, vividly showing the charms of China’s drinking culture!
